Fish Tacos - Family Recipe

Calories per serving: 600
Ingredients
- Juice of 1 lime
- 2 tsp. chili powder
- 2 tsp. paprika
- 1 tsp. ground cumin
- 2 lb. cod (or other flaky white fish)
- 1 tbsp. vegetable oil
- 1 tsp salt
- 1 tsp black pepper
- 4 tbsp. extra-virgin olive oil
- 12 corn or flour tortillas
- 1 avocado, sliced
- Lime wedges- 2 limes
- 1 cup Sour cream (optional)
SLAW:
- 1/2 c. mayonnaise
- Juice of 2 limes
- 1 cup freshly chopped cilantro
- 2 tbsp. honey
- 1/2 cup yellow corn
- 1/2 cup shredded cabbage
- 1/2 cup chopped tomatoes
- 1/2 cup shredded carrots
- 1 jalapeño chopped ( optional for spicy slaw)

Instructions
- Step 1
In a bowl, whisk together olive oil, lime juice, paprika, chili powder, cumin, salt, pepper and cayenne.
- Step 2
Add fish-Let fish marinate 30 minutes.
- Step 3
For the Corn Slaw: In a bowl, whisk together mayonnaise, lime juice, cilantro, and honey. Stir in corn, and jalapeño.
- Step 4
In a large non-stick skillet over medium heat, heat vegetable oil. Remove fish from the marinade and place the fish in the skillet. Cook fish until opaque, approximately 5 minutes per side.
- Final Step
Assemble tacos: Serve fish over grilled tortillas with corn slaw and avocado slices.
- Squeeze lime juice on top of the fish tacos and garnish with sour cream.
